Hello, Im not a professional chef, so this experience wont be professional, but will be professionally managed. Everyone will take place to the preparation of the dishes from the scratch to the end. The aim of this experience is to spend some time in an umbrian country house cooking with me in an informal environment. After we'll consume all together the meal in a joyful conversation with a glass of wine per course. The day after you will receive the recipes file. We will prepare together 2 kinds of pasta and a dessert to pick from the list below. Pasta Menu: Tortelli Ricotta and Spinaches served with butter and parmigiano (veg) Fettuccine Bolognese Tonnarelli Carbonara Tonnarelli Amatriciana Fettuccine Mushrooms sauce (veg) Tagliolini Lemon cream sauce (veg) Tagliolini Arrabbiata sauce (veg) Gnocchi Tomato sauce and Stracciatella (veg) Gnocchi Sausage based tomato sauce Dessert Menu: Tiramisù Pannacotta with berries Chocolate lava cake Pistachio semifreddo (ice cream) Other things to note: - Kids older than 10 years are welcome. - Big families with all ages kids are welcome for private classes. - I have cats in the property, in case you are allergic!
Discovering truffles
Be prepared to live a unique experience, in contact with dogs and nature! Take a break from the city chaos that fills our days every day. After an introduction to the world of truffles, we will begin our hunt. You will see how the trained dogs hunt for truffles and the passion they have, this being a very rewarding activity for them. Truffle hunting is also accessible to children (my dogs will be happy to play with them!). After the truffle hunting we will have a lunch with truffle dishes. The menu is vast so I don't suggest you have a big breakfast! We also have menus for vegetarians, celiacs, vegans and we can also change it according to your allergies or intolerances. During lunch we will have the opportunity to get to know each other better, drinking good wine and eating fresh seasonal truffles. Other things to remember: - long and comfortable trousers are required (ankles must be covered). - I also suggest wearing a pair of boots. If you don't have them, sneakers are fine too.
Behind the Label - Wine tasting & tour
We want you to see, smell, touch and taste the elements that combine to make our wines. On arrival you’ll be welcomed by Piero, Ramona or Sarah. We’ll introduce you to the rich wine-making heritage of the Orvieto area and go on a tour of the winery. You’ll be able to walk among the vines, feel the soils in which they grow and at the right time of year, even taste the grapes. From the vineyard we’ll move to our small cellar where you’ll learn about the winemaking process for our white and red wines and the final part of your time with us will be spent in the tasting room. Here you’ll be able to gain a greater understanding of how the wines are an expression of the place in which they’re made. We’ll sample both red and white wines, together with a selection of locally made breads, cheeses and artisan salumi. How ancient populations where capable to understand the quality also in those years . 2)Olive oils production in the world and explanation of cultivated varieties (Cultivars) 3)How olive oils are classified in accordance to International regulations 4)How to read the labels, try to avoid misleading advertising, get to know how to choose best quality products. 5)How to use EVOO while cooking and associated risks (smoke point temperature). 6) Specific session on EVOO tasting during which participants are taught the main principles on how to appreciate the qualities of a good Extra Virgin Olive Oil and how to use it in combination with gourmet or day to day food 7)Visit to a nearby olive grove with explanations of the various coulivars and cultivation technique 8)Visit to our proprietary modern oil mill to understand what are the various phases for processing olives with the aim to produce a vey High Standard Extra Virgin Olive Oil and comparison with old and now obsolete techniques. The day is scheduled as follows: - short introduction to beekeeping (the biology, lifecycles..) and explanation of the works to do in the apiary - visit apiary with practical lesson and photos - tasting our honey and other farm products Our tasks will be dictated by whatever the bees need that day. Come and discover Sorano and its wonders! Merge yourself in a history made up of legends and myths that span until the Renaissance period, but is rooted In the Etruscan period. The hike will begin from the Hotel della Fortezza, an ancient fourteenth-century castle, a place where it is possible to spend an arabian night. Our journey will continue towards the Vie Cave that branches off just below the village and then goes up to the opposite hill from which we will have a unique view of this enchanted village. On the way back we will stop at the Cantina della Luce, where its owners will let you taste the products of their hard work. These tombs and their Vie Cave are in less crowded areas, but their beauty and charm are second to none. Be ready to witness the magnificence of a Via Cava, a canyon carved by human hands. Feel the vibes when you dive in it, and then try to imagine the tremendous effort made by the Etruscan people to dig these man-made canyons. Then, at the company, we'll find out how the fruits of this same vineyard are working, what equipment is being used, and what purpose to do. Last but not least, we will taste the final product of the tour itself, the wine we produce by selecting from our labels. Bathe in history by hiking around the thermal complex of Saturnia! Gaze at view of an ancient Roman cistern and let your eyes stretch on the horizon from a point of view that stretches from the mountain to the sea. Saturnia is a famous spa destination already known by the Romans who built a settlement in order to accommodate all the people sent there by the Cerusici (doctors). The healing properties of these waters were already well exploited by the Romans. What is less known, however, is that this area was already appreciated and used during the Etruscan period. These people had an enormous respect for volcanic phenomenas, seen as an expression of some deities. Come and hike with me! I will take you to the top of an hill where it lays a roman water cistern known as Castellum Acquarum from which you will be able to see an incredible sightseeing. Wine tasting and cellar tour
We will begin our tasting itinerary with a visit to the 1300s cellar dug into the tuff. Here I will tell you a little about how this cave was used in the past. After the underground visit we will go back up and sit down at the tables overlooking the Duomo, if the weather does not allow it, the tasting will be inside, we will begin to taste typical Orvietana products such as roast pork, dried sausages and ham, and even cheeses with various maturations ; everything will be combined with the wines of our city, both white and red. Then, as usual, we'll end up with the holy wine with tozzetti with almonds and hazelnuts. Bike Tour in warriors land and...
From Orvieto to Rocca Ripesena, also named "Rose's Village", we discover alternative routes running through vineyards of "Grechetto", "Trebbiano" and "Sangiovese", of which we explain features and particularity about obtained wines. 3 thousands years of history to ride by bike, out of usual routes. We reach "Torre Alfina Castle" : one of the most beautiful historical mansions in Umbria-Lazio-Toscana. It' is private property, but we may get it open for visiting. Few people know here, on 3 region' s border, same food, wild boar, hare, homemade pasta, etc., have different flavors, due to various culinary traditions within few kilometers, as well as wines containing differents characters on different hills. Then in "Sasseto Wood" , named also "Fairytale Forest" by National Geographic, you will visit and immerse yourself in the magic of this place, with an extraordinary guide. Back on the saddle to Orvieto, we stop in a winery, excellence of the land, where in Etruscan caves we have a tasting of excellent wines and food. Avrete occasione di passare qualche ora immersi nella natura tra i nostri olivi secolari, veri e propri monumenti naturali del territorio. Vi faremo conoscere la nostra tecnica di coltivazione raccontandovi ogni passo necessario alla produzione del nostro olio EVO "Cisterna31". Faremo poi una degustazione dell'olio, scoprendo i sapori e gli odori caratteristici della cultivar Caninese. Infine, assaggeremo alcuni dei migliori prodotti caratteristici della Tuscia tra cui salumi, formaggi, ortaggi, legumi, pesce di lago, vino e naturalmente pane e olio!
Lago di Corbara, Castello di Prodo, di Titignano e oltre
Da Corbara inizia il bike tour costeggiando il lago seguendo la direzione per Osa e raggiungendo quindi il Castello di Prodo, poi proseguiamo lungo il Parco Fluviale del Tevere, nell’ area a nord del Lago di Corbara. E’ questa un’ oasi di verde e natura incontaminata, dove il Tevere si apre formando appunto il lago di Corbara. Muoversi con la bici è in perfetta sintonia con l’ambiente, la vegetazione è rimasta integra da secoli. Il territorio è coperto da leccete, querceti e castagneti, altra area è dei ginepri che si aggrovigliano con piante rampicanti, tipico della macchia mediterranea. Giungiamo così al Castello di Titignano, Borgo di rara bellezza, proprietà dei Marchesi Incisa della Rocchetta, da cui si gode un panorama mozzafiato. Sui rilievi sono presenti cinghiali, daini e caprioli. Lungo le sponde del Lago di Corbara e di Alviano nidificano numerose specie di uccelli, tra i quali si registrano le folaghe, il martin pescatore, il falco pellegrino, l'airone cinerino e la poiana. Le caratteristiche del territorio non hanno solo un’importanza ambientale, ma anche storica nonchè culturale. Il Tevere, fin dal Pleistocene ha modellato la morfologia di questa zona d'Italia, mediante l’ erosione ha plasmato colline e pianori, con i materiali trasportati ha determinato il colmamento delle pianure.

Stadswandeling Civita di Bagnoregio & wijnexperience
Wauw leuk dat je meegaat vandaag naar Civita di Bagnoregio en Ecowine Experience wijnhuis Tre Botti. We beginnen vandaag met een stadwandeling in Civita di Bagnoregio. Cività di Bagnoregio behoort tot één van de borghi più belli d’Italia, de mooiste dorpjes van Italië. Dit mooie dorpje heeft een bijzondere bijnaam namelijk de stervende stad “la città che muore”. Tijdens onze stadswandeling vertel ik alle ins and outs over dit mooie stadje. Na de rondwandeling gaan we de natuur van de Valle dei Calanchi in en wandelen we naar het wijnhuis Tre Botti. De Valle dei Calanchi is een prachtig en bijzonder natuurgebied onderhevig aan erosie en kleine aardbevingen welke hun invloed hebben gehad op de tufstenen en kleiachtige ondergrond. Er is een prachtig gebied gemodelleerd door de eeuwen heen. Over oude paden door weilanden en velden met olijfbomen komen we de prachtigste vogels loslopende koeien en ezels tegen. Soms ontmoeten we ook wilde dieren. Hoe mooi is dat? We komen langs de natuurlijke kathedraal en gaan afsluitend genieten van een ecowine experience (wijnproeverij) met antipasti bij de verrassing van Lazio het wijnhuis Tre Botti Lees meer over Civita di Bagnoregio
Wandelen Bomarzo
Wandelen Bomarzo. Etruskische cultuur en de natuur van het Sacro Bosco met een beetje Pasolini. Wil jij iets unieks ervaren tijdens je vakantie? Wandel dan mee met volg de Rode schoentjes door het Sacro Bosco (heilig woud) vlakbij Bomarzo het is ronduit bijzonder te noemen. Met deze excursie ga je een geweldige dag beleven. We starten bij de toren van Chia ooit de woning van de beroemde filmregisseur Pasolini. Langs watervallen en door ravijnen komen we langs een oude watermolen en bekkens waar vroeger vlas in het water werd bewaard. Het bos is een beetje sprookjesachtig. Je hoort alleen maar het water vallen, de vogels en krekels. Wat een ervaring. Via een holle weg komen we uit bij een oude kerk ruïne met graftomben. Een fascinerende en ook wel ontroerende plek met duidelijk sporen van actief leven waaronder een bekken waar druiven in werden verwerkt. Tijd voor de lunch? Of wandelen we verder naar het hoogtepunt van vandaag de Pyramide. Via smalle kronkelpaadjes en over rotsen klimmend staan we dan opeens oog in oog met dit Etruskische juweel. De wandeling is nog niet voorbij want we sluiten af met een Via Cave, om daarna te genieten met een drankje op een terrasje in Bomarzo zelf. Voor de liefhebbers is er nog tijd om Bomarzo te bezoeken.
