I propose a guided tour of the facilities with press, winery and cellar, during which I will explain the vinification of champagne. You will follow the path of grapes, from the press to the bottle. You can test your knowledge with a game that will ask you to awaken your touch, then I will offer a blind tasting of 3 vintages. Will you know how to recognize them? I will welcome you on the estate then you will present the Champagne as a whole. In a second time, we go in the vineyards to present you different grape varieties, as well as work in progress. Then we walk in the village on foot to join our traditional press. I you explained his cycle of harvest, winemaking and champagne. You will witness the disgorging on the fly (ancestral method), practice the labelling, then we will go to our cellar to taste 3 vintages of your choice.

I welcome you and we start the tasting of our wines. Then we visit the family cellar dating back to 1850, and discover the century-old oak barrels, which we still use to vinify our wines. We opened a scenographic space with 180° immersive video projected on barrels - unique in France. Following the organic conversion of my estate, we renovated our cellar and use this new setting to offer our visitors a new activity. It's a film about my rich personal history, and my work philosophy projected in the cellar, on 180-degree century-old oak barrels with sound work, allowing the public to be fully immersed in my history. Throughout the visit, you will taste our wines including the rare Klevener de Heiligenstein or the Pinot Gris Rose... We will then sit at the food bar to have lunch and discover Alsatian specialties : seasonal soup or gaspacho - Riesling pie and salads - kougelhopf-bibalaskas). Possibility to take a vegetarian option (please specify it by message before the tour) For children we suggest knacks (local sausage), vegetable chips and dessert. You can also not book for them and they will choose food directly here. We meet at Reims center station. I hold you with my air conditioned vehicle. We will drive to our vines in Villedommange, a village classified in premier cru in la Montagne de Reims. After a drive through the vines, we will stop at Mont Saint Lié, one of the most amazing view in Champagne vineyard. I will present you the AOC Champagne and explain you the wine growing and more particularly our sustainable approach. You will also try the pruning, the tying step and pruning tools depending on the season. Next let's go to our cooperative of Villedommange, to understand what are the steps of our cuvées elaboration, from the platform to the cellars in which millions of bottles are ageing : Champagne will no longer be a mystery to you. After all, let’s go to our wonderful typical champagne cellar, 200 YO, where we will introduce you to the subtlety of complex aromas champagne vines offer, by tasting three of our cuvées with local food. Then you will discover the Ratafia de Champagne. We will end the visit by a unique eating and drinking experience : 3 cuvées with local « amuse bouche ». I propose a Tasting Workshop that takes place in 2 stages. The first part is devoted to the presentation of Champagne and its terroirs (Montagne de Reims, Marne Valley, Côte des Blancs ...), and the art of making champagne. Then, in a second time, you will taste 3 very different champagnes in order to understand the nuances of the Champagne terroir. It could be 100% Chardonnay champagne, 100% Pinot Noir champagne and 100% Pinot Meunier champagne. You will leave by having understood what differentiates champagne from other sparkling wines, but also by having learned to taste it. What is the good champagne glass? At what temperature should it be served? What is a Blanc de Blancs champagne? How to give champagne with a dish. Other things to note This workshop is for everyone, neophytes as amateurs. It is offered in French and English.

Between French and Germanic influences, I propose you to discover the historical center of Strasbourg, the cathedral (outside), and the Neustadt, listed as a UNESCO World Heritage Site. From the beautiful, picturesque, centuries-old half-timbered houses of La Petite France to the charming eighteenth century mansions, during our walk we will meet Gutenberg, the father of the printing press, the intriguing Cagliostro involved in the story of the Queen's necklace, the famous composer Mozart and many other great figures from Strasbourg's history. During the Christmas market in December, we'll also discover the city's main Christmas markets, the magnificent decorated houses, the "Carré d'or", the big Christmas tree, Alsace's Christmas traditions, local crafts and the region's Christmas gastronomic specialities. After eating enough "bredele" and drinking "glühwein", it will be imperative to "measure your belly" using the column of thinness! Get ready to discover Strasbourg and its thousand-year history! The tour takes about two and a half hours, during which I will take you to all the most important areas of the city. From the founding of the city to the contemporary wars, this walking tour will take you through the centuries. We will visit together the main squares of Strasbourg, the historical districts such as the Petite France and the Tonneliers neighborhood, and of course the most significant monuments of this charming French city. During the tour I will give you information about museums, surroundings to visit and restaurants to try.

I will take you on a wonderful photo walk, where we'll stroll around the most beautiful areas of Strasbourg, admiring the architecture whilst I capture photographs of you in my hand-picked spots, that create the best backdrop for your Strasbourg photo portraits. Nous commencerons par une balade découverte des trésors que nous offrent la nature entre prairie et forêt, j'aborderais les bienfaits des plantes et les utilisations possibles. Ensuite nous pourrons allez voir mon jardin en permaculture pour découvrir les herbes folles des potagers et mieux les connaître. Je termine l'atelier en vous proposant un goûter sauvage à déguster. Autres remarques Cette balade convient aux enfants, et les chiens sont acceptés s'ils sont tenus en laisse et appréciant les humains ;)

"Les petits Bacchus en Champagne " is a unique family experience that will take young and old into the world of vines and grapes! I'll meet you in one of my plots located in my family village of Villedommange, in the vineyard of the mountain of Reims. Once in my plot, I will explain the cycle of vine growth first. Then we will discover together the secrets of the ground that feeds the vine and the wild plants that make up all the biodiversity of the Champagne vineyard. To close this sequence of discovering nature, you can pick flowers and plants and we will go to Mary's house where the children will make a mini herbarium around a snack, while the adults will taste 2 cuvées of our champagne and a glass of ratafia. All children are welcome but I count on parents to support the under-5s during the visit! The cold is not a problem but the program will be changed if rain and/or strong winds: I will offer you a visit of my Champagne cellar since we will not be able to go to the vines.
